Nick’s culinary journey began in 2001 at the celebrated Southwestern fine-dining restaurant La Casa Sena, followed by a pivotal role at the Spanish-focused La Boca, where he trained under eight-time James Beard Award-nominated Chef James Campbell. Fast forward to Urban Hill’s opening year, and Nick secured his own James Beard nomination as a 2024 Best Chef finalist—an extraordinary accomplishment in such a short span.
Before making his mark in Salt Lake City, Nick sharpened his skills over nine years in Las Vegas, where he worked as a sous chef at Bobby Flay’s Mesa Grill and alongside Chef David Walzog at the acclaimed SW Steakhouse in the five-star Wynn Resort. His expertise grew exponentially during this time, shaping his precision and approach to high-level dining.
In 2017, Nick moved to Salt Lake City, stepping into the role of Chef at the popular Tupelo. Recognizing his talent, restaurateur Brooks Kirchheimer recruited him in 2021 to help develop the vision for Urban Hill—a full year before its opening.
